No-Guilt Chocolate Cake

Serves 18

Ingredients:

2 ¼ cups flour
2 cups sugar
1/3 cup cocoa
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¼ cup brewed coffee
¾ cup orange juice
2 eggs plus 2 egg whites
¾ cup unsweetened applesauce
¼ cup canola oil

Directions:

Preheat the oven to 350°F. Combine all the dry ingredients in a food processor with plastic blade and process until well blended, about 10 seconds.

Add the coffee, orange juice, eggs, egg whites, and applesauce. Start the processor and add the oil through the feed tube while the machine is running. Process the batter for 45 seconds.

Pour the batter into a 12-cup Bundt pan sprayed with nonstick vegetable spray. Bake for 55 to 60 minutes, until you can insert a toothpick into the cake and it comes out clean.

Cool for 20 minutes before removing the cake from the pan.
