Zucchini and Yellow Squash Stir-fry

Serve 4

Ingredients:

1 cup yellow squash
1 cup zucchini
1 cup mushrooms
1 cup yellow onion
1 cup red peppers
½ cup green onions
2 jalapenos
1 garlic clove
½ cup Soy sauce (low sodium)
1 tablespoon oyster sauce
1 cup cubed tofu
1 cup chicken (optional)
2 cups Steamed brown rice

Directions:

If you are adding chicken, then sauté over medium heat in garlic, soy sauce and oyster sauce. Once cooked through add all veggies and cover to let veggies soften up and absorb the sauce. Add tofu and let cook without the lid for another 7 minutes. Remove from heat and serve in a bowl over brown rice.
