Mary Lou’s Quick-‘n’-Easy Pot Roast
Serves 4 to 6
Ingredients:
2 pounds lean roast beef
One 14.5-ounce can beef stock
One 14.5-ounce can diced tomatoes
1 cup diced celery
1 cup diced carrots
1 cup diced onions
2 bay leaves
5 peppercorns
3 cloves garlic, minced
1 teaspoon salt
Directions:
Spray the bottom of a large Dutch oven or soup pot with vegetable spray.
In the Dutch oven, combine all the ingredients. Bring to a boil over high heat,
then reduce the heat to medium-high. Cook uncovered for 3 hours.
