Mary Lou’s Mexican Chicken
Serves 4
Ingredients:
One 15-ounce can black beans
One 15-ounce can pinto beans
4 boneless, skinless, single chicken breasts
3 tablespoons minced garlic
1 teaspoon chili powder
1 tablespoon garlic salt
1 tablespoon pepper
One 20-ounce jar picante sauce
½ cup shredded Cheddar cheese
Directions:
Preheat the oven to 400°F.
Drain both cans of beans, and rinse with water. Mix the beans together and place
in the bottom of a 13 x 9 x 2-inch cooking pan.
Lay the chicken breasts on top of the beans. Spread the minced garlic over the chicken.
Sprinkle the chicken with chili powder, garlic, salt, and pepper. Cover the chicken
with the entire jar of picante sauce.
Bake the chicken, uncovered, for 30 to 40 minutes. When finished, sprinkle with
the cheese and serve.
