Hot and Sour Red Snapper
Serves 4
Ingredients:
1 teaspoon granulated garlic
¼ teaspoon salt
¼ teaspoon ground white pepper
¼ teaspoon ground red pepper
¼ teaspoon ground oregano
¼ teaspoon ground thyme
1 pound red snapper filet, or any firm white-fleshed fish
½ cup unsweetened orange juice
½ cup barbecue sauce
4 tablespoons lemon juice
1 tablespoon honey
1 tablespoon green onions
2 tablespoons very finely chopped fresh parsley
Directions:
Preheat the oven to 350° F.
In a small bowl, mix together the garlic salt, white and red peppers, oregano, and
thyme. Sprinkle the seasoning mixture on both sides of the fish.
Spray an 8-inch square baking dish with nonstick vegetable spray. Arrange the fish
fillets in the dish and set aside.
In a small saucepan over high heat, bring to a boil the remaining ingredients except
for the green onions and parsley. Boil for 10 minutes, stirring often.
Remove the sauce from the heat and spoon over the fish, then top with the green
onions and parsley. Bake, uncovered, for 20 minutes or until the fish flakes easily
with a fork.
