Grilled Salmon with Avocado Pico and Cilantro Pesto

Serves 4

Ingredients:

4 Salmon fillets
1 garlic clove
1 tablespoon cilantro
1 tablespoon Olive oil
1 teaspoon sea salt
1 teaspoon pepper
½ cup avocado
½ cup purple onions
2 jalapenos
1 large tomatoes
1 tablespoon lime juice

Directions:

Brush salmon fillets with olive oil, season with salt, pepper and crushed garlic. Grill salmon about 6 to 8 minutes per side.

Cut purple onion, tomatoes, jalapenos and avocado in small cubes. Gently mix ingredients together adding salt, pepper, lime juice and garlic to taste.

Food process cilantro, garlic, salt, pepper and olive oil together.

Arrange salmon on a plate, top with avocado pico and drizzle cilantro pesto on top.
