Cajun Chicken Breasts
Serves 4
Ingredients:
4 boneless, skinless single chicken breasts
½ tablespoon olive oil
2 tablespoons lemon juice
½ teaspoon chili powder
½ teaspoon paprika
½ teaspoon cayenne
½ teaspoon dried basil
2 cloves garlic, crushed
Salt and freshly ground pepper to taste
Directions:
Rinse the chicken and pat dry. Trim off any excess fat.
In a mixing bowl, combine the oil, lemon juice, seasonings, and garlic. Add the
chicken and marinate for 12 hours, covered, in the refrigerator.
Preheat the oven to 300°F. Remove the chicken from the marinade and arrange in a
single layer or a foil-lined 10 x 15 x 1-inch rimmed baking sheet. Pour marinade
over and around chicken.
Bake, uncovered, for 20 minutes, turning the chicken pieces over at half time. Baste
occasionally with the pan juices. When done, the chicken will be springy when lightly
touched. If overcooked, the chicken will be tough. Serve without pan juices.
