Veggie Breakfast Tacos

Serves 4

Ingredients:

4 whole wheat tortillas
4 egg whites
2 yolks for color
½ cup mushrooms
½ cup green onions
½ cup red peppers
1 garlic clove
1 avocado
¼ cup salsa
¼ cup organic fat-free sour cream
2 tablespoons lime juice
1 teaspoon sea salt
1 teaspoon pepper
1 teaspoon green Tabasco
4 slices of turkey bacon (optional)

Directions:

Mix the eggs as you would with scrambled eggs but add all veggies, salsa and garlic then cook over medium low heat while stirring constantly. Once still SLIGHTLY runny (since eggs continue to cook once removed from heat) remove from heat.

Place on whole wheat tortillas; add green Tabasco, sour cream and turkey bacon. Thinly slice avocados and season with lime juice, sea salt and cracked pepper. Add to top of taco.
