Shrimp Stew with Feta
The perfect blend of low-fat protein, veggies and complex carbs, this one-pot meal
is great over brown rice and the feta gives it a surprising twist that will wake
up your weekly meal routine.
Ingredients:
1 ½ pounds raw peeled shrimp
6 tablespoons olive oil
½ cup onions sliced lengthwise
3 clove garlic
1 red bell pepper chopped
1 teaspoon dried oregano
1 ½ cups canned tomatoes, peeled chopped and drained (reserve the liquid)
4 oz feta cheese chopped into ¼ cubes
3 Tbsp. coarsely chopped fresh parsley
Brown rice
Directions:
Heat olive oil in large heavy skillet and when hot add onions to brown. Add garlic.
Add Bell pepper and mix all until soft.
Add shrimp and sprinkle with oregano. Slat and pepper to preference. Cook shrimp
until they begin to curl and take care not to over cook. Add chopped tomatoes and
reduce heat. Add tomato liquid. Create a stew-like consistency by bringing mixture
to a boil to thicken it slightly. Cook for about five minutes, then add feta and
sprinkle fresh parsley. Do not stir needlessly at this point – you want the feta
to retain its shape.
Serve over brown rice.
